Why honey crystallizes, and what it does and doesn't tell you
Crystallization is a normal physical change in honey, not a reliable sign of purity or spoilage. Here is what actually causes it.

If you have kept a jar of honey in the cupboard for a few months, you may have noticed it turning cloudy, thickening, or forming small sugar crystals at the bottom. This is one of the most common questions we expect to get, so it is worth explaining properly rather than with a slogan.
What is actually happening
Honey is a supersaturated sugar solution — it holds more sugar than water could normally dissolve at room temperature. Over time, glucose in the honey separates out and forms crystals, while the remaining liquid becomes relatively richer in fructose. That is the entire mechanism. No additive, no contamination and no 'fake honey' is required for this to happen.
How quickly a honey crystallizes depends mostly on its glucose-to-fructose ratio, the amount of pollen and other fine particles it contains, and the temperature it is stored at. Honeys from different floral sources behave differently — some stay liquid for a long time, others turn solid within weeks. That difference comes from the flowers, not from honesty or dishonesty on the part of the producer.
What should actually concern you
- A broken or bulging seal before first opening.
- An unusual sour or fermented smell.
- Visible mold on the surface.
- Liquid separating into distinct layers with a strong off smell.
Any of those are reasons to contact us, not crystallization by itself. If a jar you ordered from us crystallizes, it is still the same honey; you can gently warm the sealed jar in a bowl of warm (not boiling) water to bring it back to a pourable texture, though many people simply enjoy it as a spread once it firms up.
We'll update this article with batch-specific texture notes once we can describe real harvests with confidence, rather than general statements.
